Bananas

Thanks for everyone's good wishes, although I am terribly disheartened to be reminded that if I do have flu, it would take 10 days to get over it...but I do realise that I am 5 days into this, so I must be on the mend. I simply detest this lazing about on the sofa with daytime TV.

I must had been really out of it last night as I've read what I wrote last night and am appalled by all the typos. I was feeling rather sorry for myself this morning as I had a really bad sore throat and a nasty headache. As the hubbler was making the weekly shopping list, he asked if there was anything particular that I wanted...comfort food to help left the misery. So, aside the soup, pasta and juice, I wanted some banana bread. So, lucky me, he made me some. Usually, I do the baking, but as moving off of the sofa required rather a lot of effort, he baked it and it was lovely, some of the best banana bread that I have eaten.

I was still too under the weather to do any knitting but I did photograph the banana bread, which is more like a cake than a bread.



This isn't the recipe that I usually use, it's a slightly modified one from Delia Smith. The hubbler is a big fan of Delia's recipes, since she really caters for the 'normal' every day type kitchen and recipes don't demand too many things not normally found in the kitchen cupboard.


This is probably one of the lightest banana bread that I have eaten. There is no added fats aside from the butter. most banana bread recipes usually vegetable oil and milk.




The bread came out suprisingly moist and tasty...and not too sweet.





The best bit is that there is some left over for tomorrow

Banana Bread

4 large, well-ripened mashed bananas (get the ones with the well speckled brown skins if possible)
100g sugar
2 tablespoon honey
1 large beaten egg
1 tablespoon orange juice
450g flour
2 teaspoon baking powder
grated rind of 1 orange
grated rind of 1 lemon
50g chopped walnut
75g butter (3 oz)

Pre-heat oven to 180 C

1. Put butter, sugar, honey & egg in mixing bowl
2. Sift flour and baking powder into bowl
3. Put bowl under mixer on low speed to combine all ingredient. The mixture will look dry.
4. Add rind, orange juice, bananas and walnut and mix again
5. Line a loaf tin with grease proof paper. Pour in mixture, using a wooden spoon to level the mixture.
6. Bake for 45-50 minutes until thoroughly coooked...i.e. wooden toothpick should come out clean.
7. Let the loaf cool for 20 minutes or so, it should 'pop' out of the tin.

Oh I hope you are better soon, that is so sweet of your hubby to bake bread for you, when I am sick I am lucky to get a cup of tea;0)
