With the arrival of autumn, the slight chill in the air gives just the incentive necessary to start baking.
Nothing beats the taste of blueberry muffins, esp when they just come out of the oven.

You can make them in bite size bits or in a more grown-up size.

They are just perfect for sharing over a hot mug of tea and beats the ones in Starbuck's, which I alway find to be cloyingly sweet.

These all natural, homebaked muffins are as good as the ingredients that you put in them. I've cut the sugar back too, since I find most baked goods recipes to be overly sweet. The thing is, the more sugar that you use, the more you need to use because it's easy to become desensitized to sweet tastes.
This is my top secret muffin recipe... enjoy.
Blueberry Muffins
Makes 12-18 muffins big muffins or 48 bite size ones
2 3/4 cup flour
1/2 cup sugar
1 tablespoon baking powder
1 1/2 teaspoon salt
2 eggs
1 cup milk
2/3 cups oil
150g blueberry (fresh or frozen is OK)
1 tablespoon lemon zest
Sift all the dry ingredients into a large bowl.
Pre-heat oven to 400F/200C.
In a separate bowl, whisk the eggs for about 15 secs. Add milk and oil and mix well.
Create a well in the dry ingredients and pour the egg mixture into the well. Leave for 5 minutes and only stir slightly to help the flour absorb the liquid mixture. Don't stir too much or you'll lose the light fluffiness in the muffins.
Fold the blueberries and lemon zest into the flour mixture... taking care to not stir more than necessary.
Lightly grease the muffin trays, filling the muffin tin about 2/3 full for each muffin.
Bake for 15-20 minutes. Stick a cocktail stick into the muffin to check to see if it's done. The cocktail stick should come out clean.
Cool for 5 minutes and eat. They are best eaten when still warm.
It is however strongly recommended that you finish the muffins before picking up your knitting, because the recipient might not understand why there are blue stains and crumbs in their socks.

I know what you mean about the sugar, I once had a patient who insisted on SEVEN sugars in each cup of tea, she increased it to eight before she left. I'm only surprised that she had any teeth left.

My muffins died a sudden death in the oven. I added sugar, when there was already sugar in the flour. A bit sad, because my daughter was helping. Teeth were jumping out due to so much sweetness.
We also had silicone muffinshapes in all kinds of colours; pink, purple, green, blue and orange.
